Shattell is an artisan chocolate factory founded in 2009 in Lima, Peru by visionary entrepreneur and expert chocolatier, Lisi Montoya. Lisi launched Shattell with the vision to make the highest quality chocolates with the finest native cocoa beans from the Peruvian Amazon.
Peruvian cocoa beans are renowned worldwide for their excellent aroma and flavor qualities. Therefore, for many years, Peru has exported these excellent cacao beans to Europe, Asia, and North America to be used as the feature ingredient in some of the most famous chocolate brands. However, until just recently, there wasn’t a strong representation of Peruvian chocolate makers making world class dark chocolates made with Peruvian cacao. This realization, combined with Lisi’s deep love for chocolate, were the driving forces that led her to learn more about the art and science of chocolate making and eventually launch Shattell.
Shattell has been handcrafting delicious chocolate creations for a decade and during this time Lisi has had the opportunity to work with amazing Peruvian cacao farmers and growers, and build a team of talented chocolate makers to not only make world-class chocolates, but also to share the treasure of Peruvian made dark chocolates with the rest of the world.

Our philosophy is that great chocolate is born in the field. In other words, it starts with the best quality cacao beans. Therefore, at Shattell we go above and beyond to build strong and lasting relationships with the cacao farmers we work with through direct trade. We do this by proving the community of farmers we work with a great value for the extra work they put on harvesting, fermenting and drying the cocoa beans for us.
This great value comes in the form of monetary compensation, paying nearly 3 times more than market value for our cacao beans, and also in the form of facilitating training and mentoring on organic farming best practices, fruit selection and fermentation process, which increases the value of each harvest and ensures the best quality for the cacao beans we source. We also provide field training and internships in our chocolate factory. That is the essence of how we give back to the communities we work with.
We’re always reminded that many of the farmers we work with used to grow coca plants, which is a dangerous practice because it’s not only illegal, but it also puts farmers in harms way because of the dangerous exchange with narcotraffickers. Therefore, our mission is to help them realize a higher economic value from cacao farming, so they don’t have to go back to growing coca plants.

We discovered the wonderful fragrances and flavors of cocoa by working with the farmers, and by doing a post-harvest process which included separating the fine beans from the rest. The results were amazing, and we recognize the farmers’ effort in each bean, that is why every award we earn is a tribute to them.
